- 1 pound sweet potatoes, peeled and diced into 1-inch cubes
- 1 tablespoon kosher salt for boiling
- 1/4 teaspoon kosher salt for seasoning
- 1/4 cup sour cream or full-fat plain yogurt
- 2 1/2 cups chopped cooked turkey breast, skin removed
- 1/2 tablespoon olive oil
- 1 large shallot, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh sage, chopped
- 2 celery stalks, chopped
- 4 ounces frozen peas and carrots
- 2 2/3 cups turkey or chicken broth, divided
- 1/4 teaspoon black pepper
- 2 tablespoons cornstarch
Instructions
- Cook the sweet potatoes by boiling them with salt for 16 to 18 minutes until tender. Drain, then mash with sour cream and additional salt.
- Preheat oven to 375°F (190°C).
- Sauté shallots, parsley, thyme, and sage in olive oil until fragrant.
- Add chopped celery and cook until tender.
- Incorporate frozen peas and carrots, turkey, 2 cups broth, salt, and pepper; bring to a boil then simmer for 8 to 10 minutes.
- Mix remaining broth with cornstarch and stir into turkey filling until thickened.
- Transfer filling to a baking dish and top with mashed sweet potatoes.
- Bake for 20 minutes; broil for 2 to 3 minutes for a golden crust.
Notes
Consider using leftover turkey or rotisserie chicken for quicker prep. Feel free to add a variety of vegetables based on your preference.
