- 1 (9 oz) package cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh basil, chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp dried oregano
- Salt and black pepper, to taste
Instructions
- Cook the Tortellini: Bring a pot of salted water to a boil, add the cheese tortellini, and cook according to package instructions (3-5 minutes). Drain and rinse under cold water.
- Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and black pepper.
- Combine Ingredients: In a large bowl, combine the cooled tortellini with cherry tomatoes, cucumber, red onion, black olives, feta, and basil.
- Mix and Serve: Pour the dressing over the salad and toss gently. Serve immediately or chill for 30 minutes to meld flavors.
Notes
Add protein like grilled chicken or chickpeas for a heartier salad. Can be made a day in advance for meal prep.
