- 1/3 cup all-purpose flour (for crumb topping)
- 3 tablespoons granulated sugar (for crumb topping)
- 3 tablespoons unsalted butter, melted (for crumb topping)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin.
- Make the cream cheese filling by mixing cream cheese, 2 tablespoons of sugar, egg yolk, and 1/2 teaspoon vanilla until smooth.
- In a large bowl, whisk together flour, 2/3 cup sugar, baking powder, baking soda, and salt.
- In another bowl, beat eggs, milk, vegetable oil, and 1 teaspoon vanilla until well blended.
- Gently stir the wet ingredients into the dry ingredients until just combined.
- Toss diced strawberries with 1 tablespoon of flour to coat them. Gently fold into the batter.
- Prepare the crumb topping by mixing flour, sugar, and melted butter until crumbly.
- Fill muffin cups halfway with batter, add cream cheese filling, then top with remaining batter and crumb topping.
- Bake for 18 to 22 minutes or until muffins are golden brown.
- Let cool in the tin for 5 minutes before transferring to a rack.
Notes
For the best texture, ensure cream cheese is at room temperature. Avoid overmixing to keep muffins fluffy.
