Description

Deliciously soft muffins filled with sweet strawberries and a rich cream cheese center, perfect for breakfast or a snack.


Ingredients

  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/4 cups diced fresh strawberries
  • 1 tablespoon all-purpose flour (for tossing strawberries)
  • 1/3 cup all-purpose flour (for crumb topping)
  • 3 tablespoons granulated sugar (for crumb topping)
  • 3 tablespoons unsalted butter, melted (for crumb topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin.
  2. Make the cream cheese filling by mixing cream cheese, 2 tablespoons of sugar, egg yolk, and 1/2 teaspoon vanilla until smooth.
  3. In a large bowl, whisk together flour, 2/3 cup sugar, baking powder, baking soda, and salt.
  4. In another bowl, beat eggs, milk, vegetable oil, and 1 teaspoon vanilla until well blended.
  5. Gently stir the wet ingredients into the dry ingredients until just combined.
  6. Toss diced strawberries with 1 tablespoon of flour to coat them. Gently fold into the batter.
  7. Prepare the crumb topping by mixing flour, sugar, and melted butter until crumbly.
  8. Fill muffin cups halfway with batter, add cream cheese filling, then top with remaining batter and crumb topping.
  9. Bake for 18 to 22 minutes or until muffins are golden brown.
  10. Let cool in the tin for 5 minutes before transferring to a rack.

Notes

For the best texture, ensure cream cheese is at room temperature. Avoid overmixing to keep muffins fluffy.
