  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon sugar
  • 1 tablespoon butter
  • 8 ounces cream cheese
  • 1/4 cup powdered sugar
  • 1 cup fresh strawberries, diced
  • Powdered sugar for dusting
  • Whipped cream
  • Maple syrup or strawberry syrup
  • Extra fresh strawberries for garnishing

Instructions

  1. In a small bowl, combine cream cheese, powdered sugar, and 1/2 teaspoon of vanilla extract. Mix until smooth and creamy. Fold in diced strawberries and set aside.
  2. In a shallow bowl, whisk together eggs, whole milk, 1 teaspoon of vanilla extract, ground cinnamon, and sugar until combined.
  3. Spread 2 tablespoons of the cheesecake filling onto one slice of bread. Top with another slice to make a sandwich and gently press the edges to seal. Repeat with remaining slices.
  4. Heat butter in a skillet over medium heat. Dip each stuffed sandwich into the egg mixture, coating evenly.
  5. Place sandwiches in the skillet and cook for 3-4 minutes per side, until golden brown and crisp.
  6. Transfer cooked French toast to a serving plate. Dust with powdered sugar and top with fresh strawberries, whipped cream, and drizzle with syrup. Serve warm.
