Ingredients

- 1 cup all-purpose flour
- 2 tablespoons cocoa powder
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (optional)
- 1/2 cup mini marshmallows
- 1/4 cup chocolate syrup or melted chocolate
- 2 graham crackers, crushed
- Whipped cream (optional)
- Toasted marshmallows (optional)
Instructions
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Heat a nonstick skillet over medium heat and add a little melted butter.
- Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes.
- Stack the pancakes and layer mini marshmallows if desired.
- Drizzle with chocolate syrup and sprinkle with crushed graham crackers before serving.
Notes
For extra indulgence, top with whipped cream or toasted marshmallows.
