Ingredients

  • 2 cups Fresh Raspberries (set aside a few for garnish)
  • 0.5 cup Granulated Sugar
  • 1 cup Heavy Cream (whipped until soft peaks form)
  • 1 tablespoon Lemon Juice (freshly squeezed)
  • 2 tablespoons Powdered Sugar

Instructions

  1. Rinse the fresh raspberries under cold water. Gently pat them dry, setting aside a few for garnish.
  2. In a bowl, combine the remaining raspberries with granulated sugar and mash gently to release juices, letting sit for 10 minutes.
  3. Blend the raspberry mixture until smooth; strain for a seedless option.
  4. Beat heavy cream in a separate bowl until thick, gradually adding powdered sugar until soft peaks form.
  5. Fold the raspberry puree into the whipped cream gently.
  6. Add lemon juice and fold until integrated.
  7. Spoon mousse into serving dishes, cover, and refrigerate for at least 2 hours.
  8. Garnish with reserved raspberries and serve immediately.
