Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 8 small corn tortillas
  • 1 mango, diced
  • 1/2 red onion, diced
  • 1 jalapeño, minced
  • Juice of 1 lime
  • Salt and cilantro for garnish

Instructions

  1. In a mixing bowl, toss the shrimp with olive oil, chili powder, and a pinch of salt. Let it marinate while prepping the salsa.
  2. In another bowl, combine diced mango, red onion, minced jalapeño, lime juice, and a sprinkle of salt. Mix and set aside.
  3. Heat a skillet over medium heat and cook the shrimp for 2-3 minutes on each side until pink and cooked through.
  4. Warm the corn tortillas in a separate skillet or microwave until softened.
  5. Assemble the tacos with a warm tortilla, cooked shrimp, and mango salsa, garnished with fresh cilantro.
