Description

A creamy and cheesy casserole combining shredded rotisserie chicken, tender zucchini, and sweet cherry tomatoes.


Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 3 medium zucchinis, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup ricotta cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • Fresh basil, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced zucchini and sauté for about 5 minutes until slightly tender.
  3. Add the minced garlic to the skillet and cook for an additional minute.
  4. In a large bowl, combine the shredded rotisserie chicken, sautéed zucchini, halved cherry tomatoes, mozzarella, Parmesan, ricotta, Italian seasoning, salt, and black pepper. Mix well.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Bake uncovered for 25-30 minutes, until cheese is melted and bubbly.
  7. Let cool slightly before serving and garnish with chopped basil if desired.

Notes

Add crushed red pepper flakes for a hint of heat. Consider topping with breadcrumbs for a crispy finish.
