Description

Ingredients

  • 1 lb Chicken Breast or Thighs
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic, minced
  • 1/2 cup Low Sodium Soy Sauce
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper, diced
  • 1/4 cup Green Onions, chopped
  • Sesame seeds for serving
  • Crushed red pepper (optional)

Instructions

  1. Heat the oil in a large pan over medium heat until it shimmers.
  2. Add the chicken pieces and cook until browned and cooked through, about 6 to 8 minutes per side. Remove and set aside.
  3. Add minced garlic to the same pan and sauté for about 30 seconds.
  4. Pour in the soy sauce, pineapple juice, honey, and vinegar. Stir and bring to a simmer.
  5. Mix cornstarch with water to create a slurry, stir it into the sauce, and cook until it thickens, 2-3 minutes.
  6. Add the cooked chicken back to the pan with the pineapple chunks and diced red bell pepper, stirring to coat.
  7. Fold in cooked rice and warm through for about 2 minutes.
  8. Remove from heat, garnish with green onions and sesame seeds, and serve hot.

Notes

For extra flavor, consider marinating the chicken for 30 minutes before cooking. Feel free to add various vegetables or make it spicy with crushed red pepper.
