- 3 Tbsp. pure maple syrup
- 3 Tbsp. white miso
- 1 Tbsp. unseasoned rice vinegar
- 2 tsp. reduced-sodium soy sauce
- 1/2 cup water
- 1 1/2 lb. sweet potatoes, cut into 1-inch rounds
- 2 Tbsp. neutral oil, divided
- 1 1/2 tsp. kosher salt, divided
- 2 Tbsp. unsalted butter
- Flaky sea salt, optional, for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a medium bowl, whisk together the maple syrup, white miso, rice vinegar, and soy sauce until smooth. Stir in the water to create a glaze.
- Toss the sweet potato rounds with 1 Tbsp. of neutral oil and 1/2 tsp. of kosher salt in a large bowl.
- Heat the remaining 1 Tbsp. of oil in a large ovenproof skillet over medium-high heat. Add the sweet potatoes in a single layer and cook for 2 to 3 minutes until golden brown.
- Flip the sweet potatoes, season with the remaining 1 tsp. of kosher salt, and cook for an additional 1 to 2 minutes.
- Add the unsalted butter to the skillet and baste the sweet potatoes with the melted butter for 30 seconds.
- Pour the maple-miso glaze into the pan and bring to a simmer.
- Transfer the skillet to the oven and roast for 23 to 28 minutes until tender and the glaze is syrupy.
- Transfer the sweet potatoes to a serving platter and drizzle with the remaining sauce from the pan.
- Optional: Sprinkle with flaky sea salt before serving.
Notes
Ensure sweet potatoes are of uniform size for even cooking. For a vegan dish, substitute unsalted butter with a plant-based alternative.
