Ingredients

  • 10 grams baking powder
  • 1.5 grams salt
  • 240 grams low-fat Greek yogurt
  • 1 large egg, whisked
  • 2 small jalapeno peppers
  • 60 grams shredded cheddar cheese

Instructions

  1. Preheat your oven to 200 degrees C (400 degrees F).
  2. Dice one jalapeno finely and slice the other into thin rounds.
  3. In a mixing bowl, whisk together the flour, salt, and baking powder until combined.
  4. Incorporate the Greek yogurt into the dry mixture and mix until a dough begins to form.
  5. Knead the dough on a lightly floured surface for 2 to 3 minutes until smooth.
  6. Gently fold in the diced jalapeno and shredded cheddar cheese.
  7. Divide the dough and shape each portion into a bagel ring.
  8. Place bagels on a parchment-lined baking sheet, brush with egg, and top with sliced jalapeno and cheese.
  9. Bake for 18 to 22 minutes until golden brown.
  10. Cool for 5 to 10 minutes and toast if desired.
