Ingredients

  • 2 cups All-Purpose Flour
  • 1.5 cups Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 0.5 teaspoon Ground Nutmeg
  • 0.25 teaspoon Salt
  • 2 large Eggs
  • 1 cup Vegetable Oil
  • 8 ounces Cream Cheese
  • 0.5 cup Unsalted Butter
  • 2 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the baking dish by greasing a 9×13 inch dish or lining it with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  4. In a large mixing bowl, mix the pumpkin puree, granulated sugar, and vegetable oil until well combined. Add the eggs one at a time, beating well after each addition.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  8. Allow the bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat the cream cheese and butter until creamy, then gradually add the powdered sugar and vanilla, mixing until smooth.
  10. Once cooled, spread the frosting over the bars and cut into squares or rectangles for serving.
