Ingredients

  • 1 zest Orange
  • 2 cups Fresh Cranberries
  • 1 cup Powdered Sugar
  • 2 tablespoons Milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan or line it with parchment paper.
  3. In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
  4. In another bowl, whisk eggs until frothy, then add vegetable oil, fresh orange juice, and zest.
  5. Combine wet and dry ingredients, mixing until just combined.
  6. Fold in the fresh cranberries gently.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes, checking for doneness with a toothpick.
  9. Allow to cool for 10-15 minutes before transferring to a wire rack.
  10. For glaze, mix powdered sugar with milk until smooth.
  11. Drizzle glaze over cooled bread and let set before slicing.
