Ingredients

  • 1/4 cup Unsweetened Cocoa Powder
  • Powdered Sugar, for dusting

Instructions

  1. Activate the Yeast: In a small bowl, combine warm milk with active dry yeast. Let it sit for 5-10 minutes until frothy.
  2. Combine Dry Ingredients: In a large bowl, whisk together flour, granulated sugar, and salt until fluffy.
  3. Incorporate Wet Ingredients: Make a well in the dry ingredients; pour in the yeast mixture, softened butter, and additional warm milk. Mix until combined.
  4. Knead the Dough: Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic.
  5. Let It Rise: Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-2 hours or until doubled in size.
  6. Prepare the Filling: Mix chopped chocolate, cocoa powder, and a pinch of salt in a bowl.
  7. Roll Out the Dough: Punch the risen dough down and roll it out into a rectangle approximately 1/4 inch thick.
  8. Spread the Chocolate Filling: Spread the chocolate filling evenly over the dough, leaving a border for easy rolling.
  9. Roll the Dough: Roll the dough tightly from one long side, sealing the seams.
  10. Twist the Dough: Slice the rolled dough lengthwise and twist the two halves together.
  11. Second Rise: Place the twisted dough in a greased loaf pan and let it rise again for 30-45 minutes.
  12. Bake: Preheat oven to 350°F (175°C) and bake for 30-35 minutes until golden brown.
  13. Cool: Allow the babka to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  14. Dust with Sugar: Before serving, dust generously with powdered sugar.

Notes

For chewier texture, let the dough rise longer. Try adding a splash of vanilla for depth of flavor.
