- 2 cups cooked brown rice
- 1 pound boneless, skinless chicken breasts, diced
- 1 cup broccoli florets
- 1 cup diced carrots
- 1 cup low sodium chicken broth
- 1 cup Greek yogurt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded low-fat cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
- In a large bowl, combine the cooked brown rice, diced chicken, broccoli, and carrots. Stir gently to combine and set aside.
- In a separate bowl, whisk together the chicken broth, Greek yogurt, garlic powder, onion powder, thyme, salt, and pepper until smooth.
- Pour the yogurt mixture over the rice and chicken, stirring until everything is evenly coated.
- Spread the mixture into the prepared baking dish, and sprinkle cheese on top if using.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 15-20 minutes until hot and bubbly.
- Allow to rest for 5 minutes before serving.
Notes
For extra flavor, sauté the chicken with garlic and onion powder before mixing. You can also add other vegetables like bell peppers or peas.
