Ingredients

- 1 lb ground chicken (90-93% lean)
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/3 cup breadcrumbs
- 1 egg
- 1/4 cup grated or finely chopped onion
- 1 tablespoon fresh parsley (or 1 tsp dried)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon flour
- 3/4 cup milk
- 1/3 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper or grease a muffin tin.
- In a large bowl, combine ground chicken, minced garlic, chopped onion, grated Parmesan, breadcrumbs, egg, parsley, salt, pepper, and Italian seasoning. Mix until just combined.
- Shape the mixture into small loaves or scoop into muffin cups.
- Place assembled meatloaves on the baking sheet and bake for 22-25 minutes, until the internal temperature reaches 165°F (74°C).
- While baking, melt butter in a saucepan over medium heat. Add minced garlic and sauté for 1 minute.
- Stir in flour and whisk for 30 seconds. Gradually add milk, whisking until thickened.
- Fold in Parmesan until melted and creamy, then season with salt and pepper.
- Serve meatloaves warm, drizzled with garlic Parmesan sauce and garnished with fresh parsley.
Notes
Experiment with adding chopped sun-dried tomatoes or spinach for added flavor and nutrients.
