Description

Savory individual meatloaves infused with garlic and Parmesan, baked to perfection and drizzled with a creamy sauce.


Ingredients

  • 1 lb ground chicken (90-93% lean)
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1/4 cup grated or finely chopped onion
  • 1 tablespoon fresh parsley (or 1 tsp dried)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 3/4 cup milk
  • 1/3 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or grease a muffin tin.
  3. In a large bowl, combine ground chicken, minced garlic, chopped onion, grated Parmesan, breadcrumbs, egg, parsley, salt, pepper, and Italian seasoning. Mix until just combined.
  4. Shape the mixture into small loaves or scoop into muffin cups.
  5. Place assembled meatloaves on the baking sheet and bake for 22-25 minutes, until the internal temperature reaches 165°F (74°C).
  6. While baking, melt butter in a saucepan over medium heat. Add minced garlic and sauté for 1 minute.
  7. Stir in flour and whisk for 30 seconds. Gradually add milk, whisking until thickened.
  8. Fold in Parmesan until melted and creamy, then season with salt and pepper.
  9. Serve meatloaves warm, drizzled with garlic Parmesan sauce and garnished with fresh parsley.

Notes

Experiment with adding chopped sun-dried tomatoes or spinach for added flavor and nutrients.
