- 2 Flour tortillas
- 2 Large eggs
- 1 cup Shredded cheese (Cheddar or mozzarella)
- 1 Avocado (sliced)
- 1 tbsp Butter
- Salt and pepper (to taste)
Instructions
- Crack the two large eggs into a bowl and lightly beat them with a fork, adding a pinch of salt and pepper.
- Heat a non-stick skillet over medium heat and add the butter. Once sizzling, pour in the beaten eggs and cook until the whites are set, about 3-4 minutes.
- Lay one flour tortilla flat, spread cheese over half, spoon the scrambled eggs, and top with avocado slices. Fold the tortilla in half.
- Return the quesadilla to the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
- Remove from skillet, let cool for a minute, cut into wedges, and serve hot.
Notes
For added spice, include sliced jalapeños or a dash of hot sauce. Experiment with different cheeses or add vegetables for extra nutrition.
