Description

A delicious and comforting Fried Egg Quesadilla that combines crunchy tortillas with creamy eggs and melted cheese, perfect for breakfast or a quick lunch.


Ingredients

  • 2 Flour tortillas
  • 2 Large eggs
  • 1 cup Shredded cheese (Cheddar or mozzarella)
  • 1 Avocado (sliced)
  • 1 tbsp Butter
  • Salt and pepper (to taste)

Instructions

  1. Crack the two large eggs into a bowl and lightly beat them with a fork, adding a pinch of salt and pepper.
  2. Heat a non-stick skillet over medium heat and add the butter. Once sizzling, pour in the beaten eggs and cook until the whites are set, about 3-4 minutes.
  3. Lay one flour tortilla flat, spread cheese over half, spoon the scrambled eggs, and top with avocado slices. Fold the tortilla in half.
  4. Return the quesadilla to the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
  5. Remove from skillet, let cool for a minute, cut into wedges, and serve hot.

Notes

For added spice, include sliced jalapeños or a dash of hot sauce. Experiment with different cheeses or add vegetables for extra nutrition.
