Description

A refreshing salad combining earthy chickpeas with tangy feta cheese, sweet dried cranberries, and a zesty lemon vinaigrette.

Ingredients

Scale
  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the rinsed and drained chickpeas, crumbled feta cheese, dried cranberries, chopped red onion, and parsley.
  2. In a separate small bowl, whisk together the olive oil, fresh lemon juice, honey, Dijon mustard, salt, and black pepper until smooth and well-combined.
  3. Pour the vinaigrette over the chickpea mixture and toss gently to ensure all ingredients are evenly coated.
  4. Let the salad sit for at least 10 minutes to allow the flavors to meld before serving.

Notes

For added crunch, consider including diced cucumbers or colorful bell peppers. Adjust the sweetness of the vinaigrette to your liking by modifying the amount of honey.
