Ingredients

  • 8 large Eggs
  • 1 cup Whole Milk
  • 2 cups Cheddar Cheese, shredded
  • 1 cup Bell Peppers, diced
  • 1 medium Onion, finely chopped
  • 2 cups Spinach, roughly chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 tablespoon Olive Oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add diced bell peppers and cook for another 3-4 minutes until tender.
  4. Add chopped spinach and cook for an additional 2-3 minutes until wilted.
  5. In a mixing bowl, crack the eggs and add milk, salt, and pepper. Whisk until well combined.
  6. Add sautéed vegetables and shredded cheddar cheese to the egg mixture, stirring to combine.
  7. Grease a 9×13 inch baking dish and pour the mixture into it, spreading evenly.
  8. Bake in the preheated oven for 30-35 minutes, or until golden brown and a toothpick comes out clean.
  9. Let cool for about 10 minutes, then cut into squares and serve warm.

Notes

For added flavor, consider optional add-ins like cooked bacon or sausage. You can also prepare ahead and store in the refrigerator overnight before baking.
