Description

A delightful dish featuring golden, crispy turkey fillets paired with tangy cranberry sauce.


Ingredients

  • 4 turkey breast fillets (about 5.3 oz each)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2.8 oz fresh breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon grated lemon zest
  • 2 tablespoons olive oil (for crust)
  • 1 large egg, beaten
  • 7 oz fresh or frozen cranberries
  • 2.8 oz granulated sugar
  • 1/4 cup orange juice
  • 1 teaspoon grated orange zest
  • Pinch of ground cinnamon
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the turkey fillets dry with a paper towel and season with salt and pepper.
  3. In a shallow bowl, mix breadcrumbs, Parmesan cheese, parsley, thyme, and lemon zest. Add 2 tablespoons of olive oil and mix until moistened.
  4. Dip each turkey fillet in the beaten egg and coat with the breadcrumb mixture.
  5. Heat 2 tablespoons of olive oil in an ovenproof skillet over medium-high heat. Cook the breaded turkey fillets for 2-3 minutes per side until golden brown.
  6. Transfer the skillet to the oven and bake for 10-12 minutes, until the turkey reaches an internal temperature of 165°F (74°C).
  7. In a saucepan, combine cranberries, sugar, orange juice, orange zest, and cinnamon. Bring to a boil, then simmer for 8-10 minutes until cranberries burst and sauce thickens.
  8. Plate the turkey and top with cranberry sauce, allowing the turkey to rest briefly before serving.

Notes

For added flavor, mix crushed garlic into the breadcrumb mixture. Consider using panko for a crunchier crust.
