Description

Enjoy warm, crispy taquitos filled with seasoned chicken and melted cheese, perfect for family dinners or game nights.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 cup chopped cilantro
  • 12 small flour or corn tortillas
  • Olive oil spray or 2 tablespoons of olive oil
  • Salsa, for serving
  • Sour cream, for serving
  • Guacamole, for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine shredded chicken, cheddar cheese, pepper jack cheese, cumin, chili powder, garlic powder, onion powder, salt, pepper, and chopped cilantro. Mix well.
  4. Warm tortillas in the microwave between damp paper towels for about 20-30 seconds.
  5. Lay a tortilla flat and spoon about 2-3 tablespoons of the chicken mixture onto the center. Roll the tortilla tightly around the filling and place seam-side down on the baking sheet.
  6. Lightly spray or brush the tops of the taquitos with olive oil.
  7. Bake for 15-20 minutes, or until golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving.
  9. Serve with salsa, sour cream, and guacamole on the side.

Notes

For a twist, use whole wheat tortillas or substitute chicken with black beans. Make sure to warm your tortillas to prevent tearing.
