Description

A warm, cheesy lasagna layered with creamy sauce, chicken, and fresh spinach, perfect for family dinners.


Ingredients

  • 9 lasagna noodles
  • 4 tablespoons salted butter
  • 4 tablespoons all-purpose flour
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 1/2 cups whole milk
  • 8 ounces cream cheese, sliced
  • 4 cups shredded jack cheese, divided
  • 1 cup ricotta cheese
  • 4 to 5 cups baby spinach leaves
  • 2 cups cooked chicken, diced or shredded
  • 1 large egg, lightly beaten
  • 1/2 teaspoon dried or fresh parsley

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the lasagna noodles in salted water until al dente. Drain and set aside.
  3. In a 4-quart saucepan, melt the butter and whisk in flour, black pepper, sea salt, garlic powder, and onion powder. Cook for 1-2 minutes.
  4. Gradually whisk in the milk, cooking until the sauce thickens, about 6-8 minutes. Mix in cream cheese and 1/2 cup jack cheese.
  5. Fold in the baby spinach leaves and set aside.
  6. In a bowl, combine ricotta cheese, beaten egg, parsley, and 1/2 cup jack cheese until smooth.
  7. Grease a 9×13 inch baking dish. Spread a layer of the white sauce, add three noodles, and half the ricotta mixture.
  8. Layer half of the chicken, drizzle with a third of the white sauce, and sprinkle with 1 cup mozzarella and 1 cup jack cheese.
  9. Add another layer of noodles, remaining ricotta, remaining chicken, and 1 cup each of mozzarella and jack cheese.
  10. Finish with noodles, remaining white sauce, and top with remaining cheeses. Bake for 30-35 minutes until bubbling.
  11. Garnish with parsley and serve.

Notes

For variations, mix different cheeses or replace spinach with other greens. Assemble a day ahead for convenience.
