Instructions
- Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit) and grease a muffin tin or line with paper liners.
- In a large mixing bowl, whisk together the Greek yogurt, applesauce, eggs, milk, vanilla extract, and brown sugar until smooth.
- Add baking powder, baking soda, ground cinnamon, and salt to the wet mixture, whisking until fully incorporated.
- Gently fold in the whole wheat flour and chopped apples with a spatula until just combined.
- Scoop the batter into the muffin tin, filling each cup to the brim.
- Bake for 20 to 25 minutes until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 to 10 minutes before transferring to a wire rack.
