  • 2 tablespoons of melted butter
  • 210 grams of brown sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 2 teaspoons of ground cinnamon
  • 1/2 teaspoon of salt
  • 325 grams of whole wheat flour
  • 3 tablespoons of granulated sugar
  • 315 grams of Granny Smith or baking apples, chopped

Instructions

  1. Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit) and grease a muffin tin or line with paper liners.
  2. In a large mixing bowl, whisk together the Greek yogurt, applesauce, eggs, milk, vanilla extract, and brown sugar until smooth.
  3. Add baking powder, baking soda, ground cinnamon, and salt to the wet mixture, whisking until fully incorporated.
  4. Gently fold in the whole wheat flour and chopped apples with a spatula until just combined.
  5. Scoop the batter into the muffin tin, filling each cup to the brim.
  6. Bake for 20 to 25 minutes until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 5 to 10 minutes before transferring to a wire rack.
