  • 2 boneless, skinless chicken breasts (about 14 ounces), cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 small red onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 red bell pepper, diced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 4 large flour tortillas
  • 3.5 ounces shredded cheddar or Monterey Jack cheese
  • 1 large ripe avocado, sliced
  • 3.5 ounces shredded lettuce
  • 2 medium tomatoes, diced
  • 4 tablespoons sour cream
  • Fresh cilantro, chopped (optional)
  • Lime wedges, for serving

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine the pieces of chicken with olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix thoroughly and allow this blend to marinate for at least 10 minutes.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add in the marinated chicken. Cook for about 5 to 7 minutes, ensuring it’s nicely browned and cooked through. Transfer the chicken to a plate and set aside to keep warm.
  3. Sauté the Vegetables: In the same skillet, add 1 tablespoon of olive oil. Sauté the chopped red onion and minced garlic for about 2 minutes until aromatic. Add the diced red bell pepper, ground cumin, and chili powder, cooking together for another 3 to 4 minutes until the veggies are tender and fragrant.
  4. Combine with Black Beans: Stir in the drained and rinsed black beans with the sautéed vegetables, seasoning with additional salt and black pepper to taste. Cook for an additional 2 to 3 minutes until everything is heated through.
  5. Prepare the Tortillas: Warm the tortillas one at a time in a dry skillet or microwave to soften them.
  6. Assemble the Burritos: On each warmed tortilla, layer a quarter of the black bean mixture, followed by the cooked chicken, shredded cheese, avocado slices, lettuce, diced tomatoes, and a spoonful of sour cream. Garnish with fresh cilantro if desired.
  7. Roll and Serve: Fold the sides of each tortilla inward, then roll it up tightly to complete the burrito. Slice in half for easier handling, if preferred. Serve immediately with lime wedges on the side.

Notes

Marinating the chicken longer results in more flavor. Optional extras include adding jalapeños for heat or corn for sweetness.
