Instructions
- Preheat your oven to 350°F (175°C).
- Grease an 8×8 inch baking dish with nonstick spray or butter.
- In a large bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), vanilla extract, and milk until smooth.
- Stir in the oat flour, baking powder, cinnamon, and salt until fully combined.
- Gently fold in the blueberries and optional ingredients like chopped nuts or chia seeds.
- Pour the batter into the prepared baking dish, smoothing it out.
- Bake for 30 to 35 minutes, until the center is set and slightly golden.

Notes
For a lower carb option, use almond flour instead of oat flour. Can be prepped the night before and baked in the morning.
