Ingredients

  • 1 cup cottage cheese (full fat or low fat)
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup milk (dairy or plant-based)
  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup chopped nuts (optional)
  • 1 tbsp chia seeds or flaxseeds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 inch baking dish with nonstick spray or butter.
  3. In a large bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), vanilla extract, and milk until smooth.
  4. Stir in the oat flour, baking powder, cinnamon, and salt until fully combined.
  5. Gently fold in the blueberries and optional ingredients like chopped nuts or chia seeds.
  6. Pour the batter into the prepared baking dish, smoothing it out.
  7. Bake for 30 to 35 minutes, until the center is set and slightly golden.

Notes

For a lower carb option, use almond flour instead of oat flour. Can be prepped the night before and baked in the morning.
