- 2 large eggs
- 1 tablespoon milk
- Pinch of salt
- Pinch of ground black pepper
- 2 small flour or corn tortillas
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced tomatoes
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons salsa
- 1 tablespoon sour cream (optional)
Instructions
- In a mixing bowl, combine the large eggs, milk, salt, and black pepper. Whisk them together until fully blended.
- Heat a nonstick skillet over medium-high heat. Pour in the egg mixture and stir briskly with a spatula. Cook for about 1 minute.
- Warm the tortillas in the microwave for 10 to 15 seconds or in a dry skillet until pliable.
- Divide the scrambled eggs evenly between the warmed tortillas and sprinkle shredded cheddar cheese over the top.
- Add diced tomatoes, fresh cilantro, and salsa to each taco. Optionally, add a dollop of sour cream. Fold the tortillas and serve immediately.
Notes
Use nonstick spray to prevent sticking, and customize toppings as desired.
