Description

Quick and flavorful breakfast tacos filled with creamy scrambled eggs, melty cheese, and fresh toppings, perfect for busy mornings.


Ingredients

  • 2 large eggs
  • 1 tablespoon milk
  • Pinch of salt
  • Pinch of ground black pepper
  • 2 small flour or corn tortillas
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons salsa
  • 1 tablespoon sour cream (optional)

Instructions

  1. In a mixing bowl, combine the large eggs, milk, salt, and black pepper. Whisk them together until fully blended.
  2. Heat a nonstick skillet over medium-high heat. Pour in the egg mixture and stir briskly with a spatula. Cook for about 1 minute.
  3. Warm the tortillas in the microwave for 10 to 15 seconds or in a dry skillet until pliable.
  4. Divide the scrambled eggs evenly between the warmed tortillas and sprinkle shredded cheddar cheese over the top.
  5. Add diced tomatoes, fresh cilantro, and salsa to each taco. Optionally, add a dollop of sour cream. Fold the tortillas and serve immediately.

Notes

Use nonstick spray to prevent sticking, and customize toppings as desired.
